Fairmont Banff Springs Executive Chef Robert Ash might be a long way from home, but he has found his culinary niche here in the Canadian Rockies.  Originally hailing from Buffalo, New York, the avid outdoorsmen and veteran culinary resort expert is proud to lead the next generation of culinary legacy here at the Castle.            

From training in France at L’Ecole Du Grand Chocolat to leading the team at Wynn Macao, China, Chef Ash has had the privilege to work with extraordinary teams in world class culinary destinations.  His career started as a dishwasher in a neighborhood Italian Trattoria and it was only within a few months that he was already doing kitchen prep and pantry work.  He became the restaurant Sous Chef at age 17 and he hasn’t stopped since.  Inspired by forming genuine connections with nature and providing guests with a true taste of place, the iconic Castle in the Rockies is an intuitive fit for Chef Ash and his family.  Prior to joining the team at Fairmont Banff Springs, Chef was a proud leader within the Omni Hotel group, acting as Executive Chef, and Director of Food and Beverage in many North American and International hotels and resorts. .
