The Vermillion Room Welcomes New Executive Chef

BANFF, AB – Chi How Kit has been appointed as Restaurant Executive Chef of The Vermillion Room at Fairmont Banff Springs, effective July 5, 2021. In his new role, he will oversee all aspects of the culinary operation of the hotel’s largest 250-seat venue.

Chef Kit brings over 25 years of experience to Fairmont Banff Springs. He started his career with Fairmont Hotels & Resorts 11 years ago at Fairmont Royal York as a Sous Chef. Chef Kit continued his career as a Sous Chef at Fairmont Tremblant in late 2011, followed by Acting Executive Sous Chef for the hotel in 2013. He then made the move to Fairmont Hotel Vancouver as Banquet Chef from 2013 to 2016, and was named as the hotel’s Executive Sous Chef from 2016 to 2018, followed by Acting Executive Chef from 2018 to 2019. He was most recently named the Executive Chef of Fairmont Le Chateau Montebello in 2019.

The Vermillion Room opened in May 2018 after a multi-million dollar renovation. The all-day dining venue serves dishes with French elegance and Canadian charm paired with an intriguing wine list, hand-crafted cocktails and local beer on tap. An online menu can be viewed here.
