Mixed with asparagus, cucumber, sunflower seeds & more!
We’ve asked our Executive Chef – Robert Ash to come to the table (pun intended) with some of his best recipes!
Below you will find his special recipe for a strawberry arugula salad.
Ingredients – Salad
1 lb strawberries (hulled and quartered)
4 cups packed arugula
1 seedless cucumber (julienned)
8 pieces fresh jumbo asparagus
1/2 cup goat cheese (crumbled)
1/4 cup toasted sunflower seeds
1/2 cup sundried cherries
Combine all ingredients together in a mixing bowl and toss, add a little dressing and toss until all items are lightly coated. Season as desired.
INgredients – dressing
1/4 cup balsamic vinegar
2 tbsp fresh copped basil
2 tsp minced garlic
2 tsp whole grain mustard
2 tsp local honey
3/4 cup extra virgin olive or canola oil
salt and freshly ground pepper
Combine all ingredients except the oil in a 16oz mason jar, place the lid on and shake, add in the oil and shake until all items are combined thoroughly. Season with salt and pepper.
